My daughter is vegetarian, so 90% of our meals are meatless!
ReplyDeleteFor Meatless Monday I made an African Pineapple Peanut Stew, served over quinoa. The stew is basically just onions, garlic, a potful of chopped kale, a can of crushed pineapple, cilantro, and peanut butter...it was delicious, and full of calcium and protein!

As a vegetarian, Mon I was inspired by your pic, but just had a veggie burger. Yesterday though I made a version of a garlic veggie noodle soup and braised the tofu in dedication to your salad tofu. Yum on a cold day.

I plan several meatless meals a week. Been discovering several new types of rices to use lately like Basmati and Jasmine rices. They are great in lots of meatless dishes!
ReplyDeleteYAY!!! I am so thrilled you all are embracing going meatless in some variation ... I have'nt spoken much on my eating choice, but will be speaking on this more in future posts ... I am vegan, I do realize this is a harder choice for some more than others but even taking a step of eliminated it for one a day a week makes a huge positive impact for animals and our environment ... way to go to all of you for your efforts! Thanks again for your support of my blog :)
